Nacho Sauce
Ingredients
1 onion, diced
½ capsicum, diced
1 420g can tomato soup
2 x 420g cans tomatoes, diced
1 ½ teaspoon of pepper
1 ½ teaspoon of paprika
1 ½ teaspoon of mixed herbs
1 ½ teaspoon of cumin
1 ½ teaspoon of coriander
1-2 cloves of garlic, diced or minced
½ to 1 teaspoon of chilli powder (depending on how hot you want it)
400-500gm minced beef (optional)
1 tub sour cream
1-2 bags of corn chips
grated cheese
Method
1. Saute onions & capsicum until clear. (if using minced beef, add topan as well)
2. Once the onions, capsicum & minced beef are cooked, put the garlic
and herbs into pan and stir until the aroma is released. (1-2 minutes)
3. Add the cans of tomato & tomato soup to the pan and stir.
4. Simmer for ½ an hour
5. When ready, layer the corn chips on a tray, and gently pour the nacho
sauce over them.
6. Put grated cheese over the top and brown for a minute or two under the grill
7. Serve with some sour cream
