Mascarpone & Coriander Chicken

6 chicken thigh fillets
4 tbs mascarpone
½ cup coriander, chopped
1 tbs extra virgin olive oil

Method
Quarter each chicken thigh. Heat oil in a frying pan, add chicken and cook until golden, turning occasionally. Add mascarpone and stir until melted, simmer and allow to bubble. Add coriander and mix well, remove from heat and season with sea salt and pepper.
